The kind of light, bright pasta that's perfect for a warm summer night! ## Ingredients - [Brightland Castelvetrano Extra Virgin Olive Oil](/content/products/castelvetrano/index.html) - 1 small onion, diced - 4 cloves garlic, minced - 1 tablespoon Italian seasoning - 1 teaspoon crushed red pepper flakes - 2 small Italian eggplants (about 1 1/2 pounds), cut into 1/2-inch dice - 1/2 cup Castelvetrano olives, sliced - 2 tablespoons tomato paste - 1/2 cup red wine - One 28-ounce can crushed tomatoes - 1 tablespoon fresh oregano leaves (optional) - 1 pound of spaghetti - Black pepper - Kosher salt - Freshly grated Parmesan, for serving ## Instructions #### For the Sauce: 1. Warm a generous pour of Castelvetrano olive oil in a large skillet over medium heat. Add the onion and a pinch of salt and cook until soft, about 3 minutes. 2. Add the garlic, Italian seasoning, and red pepper flakes. Cook until fragrant, about 1 minute. 3. Add the eggplant and olives, season with salt, and cook until the eggplant softens, about 10 minutes. Add more oil as needed. 4. Stir in the tomato paste and cook 2 minutes more. Pour in the red wine and scrape up anything stuck to the pan. 5. Add the crushed tomatoes, then swish a little water in the can and add to your pan. Simmer gently for 15 minutes, stirring now and then. Stir in the oregano in the last minute or two. #### For the Pasta: 1. While the sauce simmers, bring a large pot of salted water to a boil. Cook the pasta until just shy of al dente. Save a cup of pasta water, then drain. #### To Finish: 1. Add the pasta water to the sauce with a splash of the reserved pasta water. Toss and cook together for 1 to 2 minutes, until the pasta is al dente. Taste and adjust for salt. 2. Finish with a drizzle of Castelvetrano oil, a crack of black pepper, and plenty of parmesan. ## What You'll Need [Castelvetrano Extra Virgin Olive Oil](/content/products/castelvetrano/index.html) Sold Out 100% Italian Extra Virgin Olive Oil [4.8 Stars,20 reviews](/content/products/castelvetrano#shopify-product-reviews "20 reviews"/index.html) ## Reading next [Greek Marinated Feta](/content/blogs/recipes/greek-marinated-feta/index.html) VG [The Greek Grid](/content/blogs/recipes/the-greek-grid/index.html) GF VG ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown ## Loved by 600,000+ Customers ## Free Shipping on Orders $90+ ## Beautifully Packaged ## California-Grown brightland.co # brightland.co is blocked This page has been blocked by an extension - Try disabling your extensions.
