Vinegar is widely known as an indispensable tool in the kitchen. It brightens [salad dressings](/content/blogs/field-notes/brightrx-panzanella-salad-with-burrata/index.html) and restores balance in dishes. However, vinegar also makes a refreshing, delicious addition to cocktails. Its acidity packs a punch in drinks, and it is a fun and delicious way to transform your cocktails. Shrubs, or drinking vinegars, have been a significant element in drinks [for years](/content/blogs/field-notes/vinegar-origins/index.html), dating back to Ancient Rome. We asked the talented [Elliott Clark](https://www.instagram.com/apartment_bartender/?hl=en) to create a cocktail recipe for us using our new vinegars, [RAPTURE](/content/products/rapture/index.html) and [PARASOL](/content/products/parasol/index.html). \[close type="rte"\] \[open type="ingredients"\] \[ingredient product="false" text="2 oz gin"\] \[ingredient product="true" handle="parasol" title="Brightland PARASOL Vinegar" text="1 oz PRODUCT"\] \[ingredient product="false" text="3/4 oz lime juice"\] \[ingredient product="false" text="1/2 oz raspberry syrup"\] \[ingredient product="false" text="1 muddled strawberry"\] \[ingredient product="false" text="2 oz soda water"\] \[close type="ingredients"\] \[open type="images" count="1"\] Elliott Clark, also known as the [Apartment Bartender](https://apartmentbartender.com/), is a well-respected tastemaker, cocktail creator, spirits writer, and photographer in the spirits industry. What started out as a hobby for making cocktails at home has developed into a full-blown career that takes Elliott all over the world mixing drinks for some of the world’s most notable brands, and making the world of spirits more accessible to the at-home cocktail enthusiast. Elliott also serves as the Resident Bartender for Food52. He has shared a recipe with us for a PARASOL Gin Fizz. \[close type="rte"\] \[open type="images" count="1"\] \[close type="images"\] \[open type="instructions"\] \[instruction step="1" text="Combine all ingredients, except for soda water, into a cocktail shaker and muddle the strawberry."\] \[instruction step="2" text="Add ice to the cocktail shaker and shake to chill the drink.
