This vibrant, one-pan meal that’s as effortless as it is elegant. Juicy salmon is roasted alongside golden potatoes, fennel, citrus slices, and briny olives, all brought together with Brightland’s Everyday oils. Finished with fresh herbs and flakey sea salt, it’s a flavorful, fuss-free dinner perfect for any night of the week.
Ingredients
- 1 lb. yukon gold, baby gold, or fingerling potatoes, cut into bite-sized chunks
- 1 bulb fennel, thinly sliced
- 2 tablespoons Brightland Everyday Cooking Oil, divided
- 1 teaspoon kosher salt, divided
- 1 ½ lbs. salmon filet
- ¼ teaspoon freshly ground black pepper
- 1 lemon, thinly sliced
- 1 blood orange, thinly sliced
- 1 cup pitted castelvetrano olives
- 1 tablespoon Brightland Everyday Salad Oil
- ¼ cup fresh parsley leaves
- Flakey sea salt for serving
Instructions
- Preheat oven to 425ºF and line a large sheet pan with parchment paper.
- Add chopped potatoes, sliced fennel, 1 tablespoon Everyday Cooking Oil, and ½ teaspoon salt to the lined sheet pan. Toss to coat, then roast for 20 minutes.
- Remove the sheet pan from the oven and turn the oven down to 350ºF. Toss the potatoes and fennel with a spatula, then push them toward the edges of the pan to make room for the salmon.
- Place the salmon filet in the center of the pan. Season the salmon with the remaining 1 tablespoon Everyday Cooking Oil, ½ teaspoon salt, and freshly ground black pepper. Use clean hands to rub in the seasoning.
- Nestle the sliced lemon and blood orange between the potatoes and fennel. Scatter the olives over the vegetables and citrus.
- Roast for 15-25 minutes until the salmon is cooked through but still moist on the inside.
- Remove the pan from the oven and top with parsley leaves. Finish with a drizzle of Everyday Salad Oil and a big sprinkle of flakey sea salt. Serve immediately.
